All the same taste profile and nutrition benefit as red king salmon, but with tender, ivory-colored meat. About one in 20 wild king salmon are white in color, and are known coloquially as white or ivory kings. Salmon get their color from the pigment in the crustaceans they eat. White kings are unable to process the pigments in their food, thus their difference in color. Many locals think white kings are the best - try and let us know what you think.
